Chicken Salad MADEOVER

I have about half of an episode of Wow Wow Wubbzy to talk to you, so I’m going to get right to the point. Let me sum up the big Superbowl Sunday for you:

  1. One kid sick (like, gross sick)
  2. Husband had volunteer stuff at church in the morning
  3. No chance to clean, shop or prep food
  4. Ordered Wingstop wings at the last minute
  5. Hounded husband about the cost of 35 wings
  6. Picked up plenty of “California” Greek food from Daphne’s Cafe
  7. Ignored most of the game, watched Madonna

So, I kept Dallas home to protect the other kids at school. Jy took all the delicious leftover Greek food to work (which I had wanted him to do) and I am at home with two antsy and probably germy kids and the guilt of eating too many wings.

I won’t get into my coffee mishap this morning. Eh, yes I will.

I tried to “descale” my Keurig coffee maker, as directed by the machine. I poured 48 ounces of vinegar into the water storage area of the Keurig and ran a cycle. Ah, nice and clean. I may or may not have cleaned the vinegar out of the water storage, I can’t remember. I was tired! I made myself a nice tall glass of iced coffee, with a bit of milk and a bit of simple syrup. I sat down with the boys and took a giant drink through my straw. Burning throat! Vinegar, ack, vinegar!

Next time, coffee first, clean coffee maker second.

Ever the optimist, I am determined to improve this day! I will be exercising as soon as Max goes down for a nap and I have already fed my children a healthy breakfast and lunch. Things are looking up.

I used the tzatziki left in the fridge from yesterday’s lunch. Tzatziki is not only hard to spell, it is hard to resist. It is basically greek yogurt mixed with dill, cucumber, garlic, salt, olive oil and lemon juice. It’s a perfect chicken salad starter!

My favorite chicken salad mix-ins:

  • apples
  • grapes
  • celery
  • nuts
  • jicama
  • salt, pepper
  • fresh herbs

I delivered my little chicken bombs in hollowed out apples and the kids both took to the dish well. These are a great way to pack a salad for lunch, without worrying about soggy bread. Besides, I prefer eating chicken salad with a fork and the apple bowl is the perfect excuse to bring out the utensils.  So, get all bananas and find other chicken salad bases in your fridge. Greek yogurt, plain yogurt or even…brace yourself, cottage cheese!

Enjoy your Monday. Wow Wow Wubbzy is over and Wonder Pets has begun, so I better go clean the tornado of a living room, put the toddler down to sleep and get some exercise in. Always a party on Monday, isn’t it?
